Mushroom Soup
Ingredients:
· 1 pound mushrooms (such as button or cremini), sliced
· 1 onion, chopped
· 3 cloves garlic, minced
· 4 cups vegetable broth
· 1 cup heavy cream
· 2 tablespoons butter
· 2 tablespoons all-purpose flour
· Salt and pepper to taste
· Fresh thyme for garnish
Preparation:
In a large pot, melt the butter over medium heat. Add the onion and garlic, and sauté until translucent.
Add the sliced mushrooms and cook until they release their moisture and become tender.
Sprinkle the flour over the mushrooms and stir well to coat.
Gradually add the vegetable broth while stirring constantly.
Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
Stir in the heavy cream and season with salt and pepper.
Garnish with fresh thyme and serve hot.
