Mushroom and Spinach Stuffed Chicken Breast
Ingredients:
4 boneless, skinless chicken breasts
· 1 cup mushrooms (such as cremini or shiitake), sliced
· 2 cups fresh spinach
· 4 slices mozzarella cheese
· 2 tablespoons olive oil
· 2 cloves garlic, minced
· Salt and pepper to taste
Preparation:
Preheat the oven to 400°F (200°C). Slice a pocket into each chicken breast without cutting all the way through.
In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
Add the mushrooms and cook until they release their moisture and become tender.
Stir in the fresh spinach and cook until wilted. Remove from heat.
Stuff each chicken breast with a slice of mozzarella cheese and the mushroom-spinach mixture.
Season the chicken breasts with salt and pepper and secure with toothpicks if needed.
Place the stuffed chicken breasts on a baking sheet and bake for 25-30 minutes until cooked through.
Remove the toothpicks before serving.
